摘要
目的 :探讨大型活动食品卫生保障工作 ,交流管理经验。方法 :采用危害分析与关键环节控制点 (HACCP)系统原理 ,初步总结出重大活动 (会议 )前期、期间及结束后卫生监督保障工作中关键环节监督要点、工作步骤及值得重视的问题。结果 :避免了群体性食物中毒和食源性肠道传染病的发生。结论 :强调制定大型活动卫生保障管理办法并纳入法制管理的必要性。
Objective:To discuss food security of great even t activity and communic ate management experience Method:Use principle of hazard analy sis critical con trol points(HACCP),generalize primary critical control points of sanitation sec urity and supervision before the event(conference),during the event and after the event,summarize operation procedure and some problem we must pay attention to Result:Avoiding group food poisoning and foodborne disease Conclusion:Empha sizing the essentiality of design method of food security during great event and putting it in legal management
