摘要
试验用不同品种和杂种共30头肥育猪做了复因子试验,观察品种、屠宰体重和解剖学部位对肌纤维组织学特性的影响。结果表明,在肌纤维直径上存在品种X部位互作。一般而言,限肌肌纤维直径小于股二头肌,但高度培育的瘦肉型猪例外。屠宰体重间在肌纤维直径和密度上无显著差异,但屠宰体重×品种互作显著。试验的各品种间在肌纤维直径和密度上存在显著差异,以东北民猪肌纤维直径最小,肌纤维密度最大,此乃迄今为止所见国内外各品种猪最具特色的性状,可以认为这是东北民猪独特的优良肉质性状。
A trial involving 30 pigs from five breeds (crossbreds) were conducted to study the effects of breeds, slaughter weight and anatomical site on the diameter and density of muscle fibre of pig, and the relationship between muscle fibre characteristics and meat quality. The result showed that the breed X natomical interaction was significant on fibre diameter. In general, fibre diameter of Songissimus dorsi was smaller than that offibre diameter and fibre density between two slaughter weights, however, significant slaughter weight X breed interaction existed. Significant differences in fibre diameter and fibre density were found between breed, of the breeds tested, Min pig has the characteristics of smallest muscle fibre diameter and greatest fibre density. This characteristics should be considered as an advantage of Min pig.
