摘要
随机选取5头黑水藏猪,体重(64.2±4.49)kg,测定背最长肌中氨基酸、脂肪酸、肌苷酸含量及肌纤维组织学特性。结果显示,背最长肌中总氨基酸、必需氨基酸、鲜味氨基酸和肌内肌苷酸含量分别为170.0、64.5、74.1和2.45 mg/g,同时,蛋氨酸为第一限制性氨基酸;其中,肌内脂肪酸以棕榈酸(C16:0)、硬脂酸(C18:0)、油酸(C18:1)和亚油酸(C18:2)为主,含量分别为23.02%、10.76%、46.35%和13.39%;肌纤维面积和密度分别为1361.10μm2及427.86根/mm2。此研究明确了黑水藏猪肉质营养成分及肌纤维组织学特性,同时,为进一步研究黑水藏猪肉质等相关特性以及保护和开发藏区当地稀有遗传资源提供了基础数据和理论支持。
In this paper,five Heishui tibetan swine (BW (64.2 ± 4.49) kg) were chosen randomly to determine the amino acids,fatty acids,inosine monophosphate and muscle fiber of longissimus dorsi muscle.The results showed that the content of total amino acids,essential amino acids,flavor amino acids and intramuscular inosine monophosphate in longissimus dorsi muscle was 170.0,64.5,74.1 and 2.45 mg/g,respectively,at the same time,methionine as the first restrictive amino acids ; Of which for intramuscular fatty acids,the ratio of palmitic acid (C16∶ 0),stearic acid (C18∶ 0),oleic acid (C18∶ 1) and linoleic acid (C18∶ 2) were 23.02 %,10.76 %,46.35 % and 13.39 %,respectively; Muscle fiber area and density were 1361.10 μm^2 and 427.86 numbers/mm^2,respectively.Herein,the histology characteristics and nutritional components of longissimus dorsi in Heishui tibetan swine were defined,which provided the data and theory support for further revealing the characteristics of muscle in Heishui tibetan swine and protecting rare genetic resources of Tibet area.
