本文综述了姜油的提取法、姜油中挥发油及辣素组份分析、姜辣素组份的化学合成以及姜油物化性质等四个方面的研究进展。
This paper has reviewed the research progress of ginger essential oil with 36 references in the aspect of extraction, compositional analysis, pungent principles synthesis and physical chemical properties.
