摘要
冷杀菌作为一种新型杀菌技术 ,正逐渐在食品工业中得到应用。对超高压杀菌、辐照杀菌、高强脉冲电场杀菌等冷杀菌技术的原理、优点作了说明 ,并对其在果汁生产中的应用进行了讨论。
As a new approach, cold sterilization is getting more and more widely used in the food industry. In the paper, the principles and advantages of some cold sterilization techniques (e.g. ultra-high-pressure sterilization, irradiationsterilization and high-intensity pulsed electric field sterilization) are described, and the application of them to juice processing studied.
