摘要
选取浸泡温度、浸泡时间、发芽温度、发芽时间4个因素进行正交试验,以发芽糙米的总糖、 还原糖、可溶性蛋白含量为考察指标,对糙米发芽条件进行优化,最终确定糙米发芽的最佳条件为: 浸泡温度32℃,浸泡时间12h,培养温度30℃,培养时间36h。
The effects of steeping temperature, steeping time, incubation temperature and incubation time onthe germination of brown rice was investigated through a 4- factors orthogonal experiment. The operation conditions were optimized in light of the total sugar and the content of reducing sugar and soluble protein of the germinated brown rice. The optimum conditions for the germination were: steeping temperature 32℃ , steeping time 12h, incubation temperature 30℃ , incubation time 36h.
