不同成熟度的国产大豆及其油脂品质分析 被引量:9

摘要 对国产大豆的青豆和熟豆及其油脂的主要成分进行了分析。研究表明:青豆与熟豆的粗脂肪含量相差不多,青豆的粗蛋白含量明显低于熟豆。青、熟大豆油的含磷量差别较大,而且青大豆油中的非水化磷脂是熟豆的3倍多,酸值和过氧化值以及叶绿素含量也远远高于熟大豆油。从青大豆油与熟大豆油的脂肪酸组成来看:熟大豆油的饱和脂肪酸比青大豆油要高。 This paper analyses the main composition of the domestically grown green and ripen soybean oil.The research shows that there is no difference in the crude fat between the green soybean and the ripen one,and the crude protein content of green soybean is lower than that of ripen one.The prosphorus content is large different and nonhydratic phosphlipids of the green soybean is third times higher than that of ripen one.The acid value.Peroxide value and the content of chlorophyll of the green soybean are far higher than the ripen one.From the composition of fatty acid,we can see that the saturated fatty acid of the green soybean oil is higher than that of the ripen one.
