摘要
食品加工过程中微生物污染是威胁食品安全的主要因素,而传统微生物检测方法存在周期长、效率低等问题,本文系统分析了微生物污染的发生机理与传播特征,并构建全链条防控体系,研究表明基于多技术融合的快速检测平台能实现对病原微生物的精准识别且智能化防控系统可有效降低污染风险。
Microbial contamination during food processing is a major factor threatening food safety.However,traditional detection methods have problems such as long cycles and low efficiency.This paper systematically analyzes the occurrence mechanism and transmission characteristics of microbial contamination and constructs a full-chain prevention and control system.Research shows that a rapid detection platform based on multi-technology integration can achieve precise identification of pathogenic microorganisms,and an intelligent prevention and control system can effectively reduce the risk of contamination.
