摘要
酒作为人类饮食文化的重要组成部分,其复杂的化学成分体系一直是营养与医学领域的研究热点。尽管过量饮酒已被证实对多器官和系统造成明确损伤,但酒类中含有多酚类、有机酸类、氨基酸类、微量元素等多种生物活性成分,流行病学和临床医学证明适量饮酒具有抗氧化、抗炎、调节代谢等功能作用。本综述系统梳理了黄酒、葡萄酒、啤酒、白酒4类主流酒类的生物活性成分组成特征及其对人体健康的调节效应,深入阐述其调节人体心血管、神经系统、心理健康及调节消化系统和肠道的分子机制与研究证据,并辩证分析酒精本身及功能因子间的相互作用,旨在为理解酒饮料与健康的关联提供科学参考。
Due to wine consumption as an important part of human diet culture,the complex chemical composition of alcoholic beverages has been focused in the nutrition and medicine field.Although abuse of alcohol is severely damage to multiple organ and systems,various bioactive components in alcoholic beverages,such as polyphenols,organic acids,amino acids,and trace elements,can exert antioxidant,anti-inflammatory,and metabolic regulatory effects when consumed in moderation.This review systematically summarized the composition characteristics of bioactive components and their health benefits in 4 major alcoholic beverages of huangjiu,wine,berr and Baijiu.This review focuses on the molecular mechanisms and research evidence regarding their benefits for the cardiovascular system,nervous system,mental health and the regulation of the digestive system and gut.In addition,it critically discusses the interactions between alcohol itself and bioactive components,which would provide a scientific reference for understanding the relationship between alcoholic beverages and health.
