摘要
近年来,黄酒的基础研究取得了较大的进步,并且许多新技术和新装备得到应用。文中介绍了近年来黄酒酿造微生物、挥发性香气组分和功能性组分等方面的研究新进展,以及黄酒行业采用的最新技术和装备。
In recent years,the basic research of Chinese rice winehas made great progress,and many new technologies and equipments have been applied.The recent advances on the brewing microorganisms,volatile aroma components,functional components of rice wine,and the latest technologies and equipment used in the rice wine industry were introduced in this paper.
