农产品中重金属快速检测方法研究进展

摘要 随着农田污染及高本底背景问题的加剧,农产品中重金属超标引发的质量安全问题日益受到关注,然而,传统的检测方法普遍存在检测周期长、成本高、对仪器和人员专业要求高等问题,难以满足快速筛查的实际需求。本文系统阐述了当前农产品中重金属残留快速检测的主要技术及其应用,重点介绍了免疫分析法、酶抑制法、X射线荧光光谱法和电化学分析法等方法的原理、特点及适用场景,并总结了各类方法的优缺点、适用范围和局限性,为农产品质量安全监管提供参考。 With the intensification of farmland pollution and high background contamination,quality and safety issues caused by excessive heavy metals in agricultural products have attracted growing attention.However,traditional detection methods generally suffer from long testing cycles,high costs,and demanding requirements for instruments and professional personnel,making it difficult to meet the practical needs for rapid screening.This paper systematically elaborated on the main types and applications of rapid detection technologies for heavy metal residues in agricultural products,with a focus on the principles,features,and applicable scenarios of methods such as immunoassays,enzyme inhibition assays,X-ray fluorescence spectroscopy(XRF),and electrochemical analysis.It also summarized the advantages,limitations,and scope of application of these methods,providing references for the quality and safety regulation of agricultural products.
