摘要
从红曲米中分离、纯化到一株红曲属菌株ZQ-1,通过观察菌落形态及其菌丝体、孢子结构等显微特征,发现该菌株与紫色红曲霉的形态特征基本一致;应用内转录间隔区(ITS)系统发育分析,该菌株与GenBank中公布的多株紫色红曲霉序列的相似性均高达99%以上;结合形态特征,将其鉴定为紫色红曲霉Monascus purpureus ZQ-1。利用该菌株制备成红曲米,HPLC检测到功能性成分洛伐他汀含量达到了3.59mg/g,是功能性红曲米(粉)行业标准要求含量的8.975倍。高产洛伐他汀红曲菌的获得,有助于增加对红曲菌菌种资源的挖掘,提升了功能性红曲食品品质及降脂养生的价值。
A strain of Monascus ZQ-1 was isolated and purified from red yeast rice,it was found that the morphological characteristics of this strain were basically consistent with those of Monascus purpureus by observing the colony morphology mycelium,spore structure and other microscopic features.By using ITS phylogenetic analysis,the similarity between this strain and several strains of Monascus purpureus published in GenBank was more than 99%.Combined with morphological characteristics,it was identified as Monascus purpureus ZQ-1.The strain was prepared into red yeast rice,and HPLC analysis showed that the content of the functional component lovastatin reached 3.59 mg/g,which is 8.975 times the content required by the functional red yeast rice(powder)industry standard.The acquisition of high-yielding lovastatin Monascus strain helps to increase the exploration of Monascus species resources,enhances the quality of functional Monascus-fermented foods,and enhance the value of lipidlowering and health preservation.
