摘要
目的比较分析不同营养强化剂对配方乳粉中甲醛生成的影响。方法在全脂粉+高油乳清粉中添加5%有效含量的营养强化剂,制备含不同营养强化剂的配方乳粉样品并检测其甲醛含量,分析营养强化剂对甲醛生成的影响。结果硫酸亚铁、新旧预混硫酸亚铁、新旧预混矿物盐会促进配方乳粉中甲醛含量的积累,而焦磷酸铁、预混维生素对甲醛产生的作用不显著。2倍旧预混铁和2倍维生素C组合添加组甲醛含量高达11.65 mg/kg,显著高于旧预混铁+维生素C组合添加组(6.33 mg/kg)和旧预混铁添加组(1.52 mg/kg)(P<0.05);2倍新预混铁和2倍维生素C组合添加组甲醛含量为5.31 mg/kg,同样显著高于新预混铁+维生素C组合添加组(3.23 mg/kg)和新预混铁添加组(0.97 mg/kg)(P<0.05),说明硫酸亚铁与维生素C联用,对配方乳粉甲醛的产生具有协同增强作用。添加新预混铁样品、新预混矿物盐样品的甲醛含量均分别低于对应的添加旧预混铁样品、旧预混矿物盐样品,说明预混铁、预混矿物盐的新旧两种配方,因包埋工艺不同,对配方乳粉中甲醛产生的影响不同。结论该研究通过考察不同营养强化剂对配方乳粉中甲醛产生的作用,为进一步了解乳粉中甲醛产生的机制和生产企业保障产品质量安全提供一定的数据支持。
Objective To compare and analyze the effects of different nutritive fortifiers on formaldehyde formation in formula milk powder.Methods The 5%effective nutrient fortifiers were added to whole milk powder and high oil whey powder to prepare formula milk powder samples containing different nutrient fortifiers and their formaldehyde content was detected,the effects of nutrient fortifiers on formaldehyde generation were analyzed.Results The ferrous sulfate,new and old premixed ferrous sulfate,and new and old premixed mineral salts enhanced the generation of formaldehyde in formula milk powder,ferric pyrophosphate and premixed vitamin unremarkably affected the generation of formaldehyde.The addition group of 2 times old premixed iron and 2 times vitamin C combination had a higher formaldehyde content of 11.65 mg/kg,which was significantly higher than that of old premixed iron plus vitamin C addition group(6.33 mg/kg)and old premixed iron addition group(1.52 mg/kg)(P<0.05);the formaldehyde content of the addition group of 2 times new premixed iron and 2 times vitamin C combination was 5.31 mg/kg,which was also significantly higher than that of new premixed iron plus vitamin C addition group(3.23 mg/kg)and new premixed iron addition group(0.97 mg/kg)(P<0.05).The results indicated that ferrous sulfate and vitamin C had a synergistic enhancement effect on the production of formaldehyde in formula powder.The formaldehyde content in samples with new premixed iron and new premixed mineral salt was lower than that in the samples with the corresponding old premixed iron and old premixed mineral salt samples,which showed that different effects of formaldehyde production in formula milk powder may be caused by different embedding methods of premixed iron and premixed mineral salt.Conclusion This study provides certain data support for further understanding the mechanism of the production of formaldehyde in milk powder and ensuring the quality and safety of products in milk powder production enterprises.
