摘要
乳制品是构成人类日常饮食中的基本营养成分之一,乳制品的安全问题与消费者健康联系密切。重金属、抗生素和激素等污染物指标超标是构成乳制品安全风险和人类疾病危害的主要隐患之一。为了严格把控乳制品从生产到被消费者使用的全过程,开发高效的样品前处理方法和准确可靠的检测分析技术至关重要。近年来,随着分析化学和材料科学的快速发展,针对乳制品中污染物的样品前处理方法和检测分析技术也得到飞速发展。因此,本文综述了近5年乳制品中污染物检测技术的最新研究进展,总结了不同前处理方法(包括液-液萃取、固相萃取和QuEChERS法)之间的优势和差异,并重点综述了色谱检测法、免疫分析法和传感器技术在乳制品中污染物检测中的应用,突出了新兴的快速检测方法在该领域的优势所在。最后,对于目前检测技术尚存的不足与缺陷提出展望,旨在为该领域在未来的研究发展提出一定的参考性。
Dairy products are one of the basic nutrients in the daily diet of human beings,and the safety of dairy products is closely related to the health of consumers.Excessive levels of pollutants such as heavy metals,antibiotics and hormones are one of the main hidden dangers posing dairy safety risks and human disease hazards.In order to strictly control the entire process of dairy products from production to consumer use,it is essential to develop efficient sample preparation methods and accurate and reliable detection and analysis techniques.In recent years,with the rapid development of analytical chemistry and materials science,sample preparation methods and detection and analysis techniques for contaminants in dairy products have also developed rapidly.Therefore,this paper reviewed the latest research progress in the detection of contaminants in dairy products in the past 5 years,summarized the advantages and differences between different pretreatment methods(including liquid-liquid extraction,solid-phase extraction and QuEChERS),and focused on the application of chromatography detection,immunoassay and sensor technology in the detection of contaminants in dairy products,highlighting the advantages of emerging rapid detection methods in this field.Finally,this paper prospected the shortcomings and defects of the current detection technology,aiming to provide a certain reference for the future research and development of this field.
