摘要
随着社会的发展和人们的生活质量提高,食品消费已从注重数量向注重质量和安全转变.兽药残留问题是影响动物性食品质量安全的重要因素之一,已成为人们普遍关注的一个社会热点问题.对兽药残留的危害、产生的原因及目前主要监管措施进行了综述.
With the social development and improvement on quality of life,the focus of food consumption is altering from quantity to quality.The problem of veterinary drug residues,one of the important factors that influence the safety of animal derived food,has turned into a social focal problem.The hazard,causes and monitoring measures of veterinary drug residues were summarized in this review.
