摘要
兰州百合是甘肃省的重要特色农产品之一,全国唯一的可食用甜百合。其采后保鲜是确保百合产业效益的关键,然而目前仍缺乏简单、有效且成本低廉的保鲜方法。本文采用外源三磷酸腺苷(ATP)处理百合,研究ATP对贮藏期百合生理和品质的影响。结果显示,使用1.0 mmol/L ATP溶液处理30 min,能够显著减缓贮藏期百合硬度的下降,保持较高的可溶性蛋白、总可溶性固形物(TSS)和维生素C的含量,显著增加可滴定酸(TA),其中硬度、总可溶性固形物含量、维生素C和可溶性蛋白含量,分别平均高出对照组20.08%,11.46%,21.23%,29.16%,说明外源ATP有助于维持贮藏期间兰州百合的品质。进一步观察表明,外源ATP处理使兰州百合在贮藏期的过氧化氢酶(CAT)和超氧化物歧化酶(SOD)活性、总酚类物质和黄酮类含量提高,其中ATP处理组的过氧化氢酶和超氧化物歧化酶活性平均分别高出对照组10.22%,22.92%,提示外源ATP对兰州百合的采后保鲜作用可能与其能提高抗氧化能力有关。综上,外源ATP处理能够有效延缓兰州百合在贮藏期间品质的下降,为延长百合的保质期提供了一种简便、低成本的手段。
Lanzhou lily,a unique edible sweet lily species in China and a key agricultural product of Gansu Province,requires effective and low-cost postharvest preservation methods to maintain its commercial value.This study investigated the effects of exogenous adenosine triphosphate(ATP)treatment on the physiological and quality attributes of Lanzhou lily during storage.Results showed that treatment with 1.0 mmol/L ATP solution for 30 min significantly slowed the decline in firmness and maintained higher levels of soluble protein,total soluble solids(TSS),and vitamin C content.It also significantly increased titratable acidity(TA)compared to the control group.Specifically,the firmness,TSS,vitamin C,and soluble protein content in the ATP-treated group were on average 20.08%,11.46%,21.23%,and 29.16%higher than those in the control group,respectively,indicating that exogenous ATP helps maintain the quality of Lanzhou lily during storage.Further analysis revealed that ATP treatment enhanced the activities of catalase(CAT)and superoxide dismutase(SOD),as well as the contents of total phenolics and flavonoids during storage.The CAT and SOD activities in the ATP-treated group were on average 10.22%and 22.92%higher than those in the control,suggesting that the preservation effect of exogenous ATP may be associated with improved antioxidant capacity.In conclusion,exogenous ATP treatment effectively delays quality deterioration in postharvest Lanzhou lily and offers a simple,low-cost approach for extending its shelf life.
