雷笋低温贮藏保鲜工艺优化研究

Optimization of Low-Temperature Storage and Preservation Process for Lei Bamboo Shoots

摘要 文中试验针对雷笋普遍采用冷库直接冷藏保鲜技术的弊端,研究真空预冷结合湿冷保鲜技术对雷笋抗老化效果的影响,测定贮藏期间失水率和粗纤维改变量,通过单因素试验、正交试验确定真空预冷和湿冷保鲜技术最优工艺参数,解决雷笋在贮藏过程中的失重、褐变等关键技术问题。 This study addresses the limitations of the conventional direct cold storage preservation technique commonly used for Lei bamboo shoots.It investigates the effects of vacuum pre-cooling combined with hypothermia humid cold storage technology on the anti-aging properties of the shoots.Key parameters determined during storage include water loss rate and crude fiber content changes.Through single-factor experiments and orthogonal experimental design,the optimal process parameters for vacuum pre-cooling and humid cold preservation were established.This approach effectively addresses critical technical challenges such as weight loss and browning during Lei bamboo shoot storage.
