采前喷施保鲜剂对美早甜樱桃贮藏特性及品质的影响

Effects of Preharvest Spraying with Preservative Agents on Storage Characteristics and Quality of Tieton Sweet Cherries

摘要 【目的】在美早甜樱桃采前喷施不同浓度的丙酸钙和壳聚糖,探究不同保鲜剂对甜樱桃贮藏特性及果实品质的影响,为优化甜樱桃栽培管理及采前保鲜技术提供理论依据。【方法】以8年生美早甜樱桃为试验材料,在其幼果期、膨大期、转色期分别喷施不同浓度的丙酸钙(0.5%、1%、1.5%)和壳聚糖(0.5%、1%、1.5%),清水喷施为对照,果实成熟后进行贮藏,测定贮藏期间甜樱桃果实的腐烂率、果实硬度、可溶性固形物质量分数、总酸含量、抗坏血酸等指标。【结果】采前喷施1%的CTS(T5)和1.5%的CTS(T6)处理显著抑制美早甜樱桃果实劣变;此外,壳聚糖处理显著延缓酸甜樱桃果实含量下降,并维持可溶性固形物(SSC)和抗坏血酸(维生素C)含量;CP处理组(T3)则通过螯合自由基抑制维生素C降解(保留率较CK提高7.5%)。两种保鲜剂的作用效果均呈浓度依赖性,CTS处理组1.5%浓度(T6)综合表现最优,而CP处理组以1%浓度(T2)更适平衡保鲜与细胞适应性。【结论】研究验证了采前喷施保鲜剂通过成膜抑菌、调节呼吸代谢和抗氧化活性延长甜樱桃货架期的可行性,为构建“采前抗性诱导+采后低温贮藏”的绿色保鲜体系提供理论依据,进而推动甜樱桃产业高效发展。 【Objective】The effects of different concentrations of calcium propionate and chitosan applied pre-harvest on the storage characteristics and fruit quality of Tietion cherries were investigated to provide a theoretical basis for optimizing cherry cultivation management and pre-harvest preservation techniques.【Methods】Using 8-year-old Tietion cherries as experimental material,different concentrations of calcium propionate(0.5%,1%,1.5%)and chitosan(0.5%,1%,1.5%)were sprayed during the young fruit stage,expansion stage,and color change stage.Water spraying was used as the control.After fruit maturity,storage tests were conducted to measure indicators such as decay rate,fruit firmness,soluble solids content(SSC),total acid content,and ascorbic acid during storage.【Results】Pre-harvest application of 1%chitosan(T5)and 1.5%chitosan(T6)significantly inhibited fruit deterioration.Moreover,chitosan treatment significantly delayed the decrease in acid content of Tietion cherries and maintained the quality fraction of SSC and ascorbic acid(Vc).The calcium propionate treatment group(T3)inhibited Vc degradation by chelating free radicals(with a retention rate 7.5%higher than the control).The effects of both preservatives were concentration-dependent,with the 1.5%chitosan treatment group(T6)showing the best overall performance,while the calcium propionate treatment group was more suitable at 1%concentration(T2)for balancing preservation and cell adaptability.【Conclusion】The study confirmed the feasibility of extending the shelf life of Tietion cherries by applying pre-harvest preservatives through film formation to inhibit bacteria,regulate respiratory metabolism,and enhance antioxidant activity.This provides a theoretical basis for establishing a“pre-harvest resistance induction+post-harvest low-temperature storage”green preservation system,thereby promoting the efficient development of the Tietion cherry industry.
