基于形态与理化特性分析9个主要产区草果的品质差异

Analysis of quality differences of Amomum tsao-ko from 9 major producing areas based on morphological and physicochemical characteristics

摘要 目的探讨9个主要产区草果的品质差异。方法通过采集9个主要草果产区的31个样品,分析草果的形态特征(纵径、横径、单果重、果型指数)、理化指标(挥发油、水分、灰分含量)及安全指标(重金属、黄曲霉毒素)的产区差异及其影响因素。结果不同产区草果的横径、单果重、果型指数、水分含量及挥发油含量存在显著差异(P<0.05)。滇西产区(如泸水市、福贡县)草果的综合品质较优,表现为单果重较大、挥发油含量较高,而越南及马关产区的草果形态细长,且分别可能存在镉和总砷超标的潜在风险,所有样品均未检出黄曲霉毒素,灰分、铅和汞含量符合标准。结论建议加强草果采后清洗以降低重金属残留,并推动制定强制性国家标准以保障食品安全。本研究可为草果品质评价、产区优选及标准完善提供参考。 Objective To explore the quality difference of Amomum tsao-ko from 9 major producing areas.Methods By collecting 31 samples from 9 major Amomum tsao-ko production areas,the morphological characteristics(longitudinal diameter,transverse diameter,single fruit weight,fruit type index),physicochemical indicators(volatile oil,moisture,ash content),and safety indicators(heavy metals,aflatoxins)of Amomum tsao-ko were analyzed,along with their influencing factors.Results There were significant differences in transverse diameter,single fruit weight,fruit shape index,water content and volatile oil content of Amomum tsao-ko from different producing areas(P<0.05).The comprehensive quality of Amomum tsao-ko in Western Yunnan(such as Lushui,Fugong)was better,which was characterized by larger single fruit weight and higher volatile oil content.However,the morphology of Amomum tsao-ko in Vietnam and Maguan was slender,and there might be potential risks of cadmium and total arsenic exceeding the standard,respectively,aflatoxins were not detected in all samples,and ash content,lead and mercury met the standards.Conclusion It is recommended to strengthen the post-harvest cleaning of Amomum tsao-ko to reduce heavy metal residues and promote the development of mandatory national standards to ensure food safety.This study can provide reference for quality evaluation,production area optimization and standard improvement of Amomum tsao-ko.
