摘要
山楂中含有大量对人体有益的物质,其中多糖相较于其他活性成分含量更多。多糖具有一定抗血糖、抗血脂作用,且具有良好的抗氧化能力。以超声波辅助提取法对山楂中多糖的提取工艺进行优化,根据单因素试验和正交试验的结果最终得出多糖的最佳提取工艺为:料液比1∶40(g/mL)、乙醇浓度85%、超声时间40min、温度60℃,在此条件下测得多糖的得率为15.33%,旨在为食品中多糖的高效提取及合理应用提供理论参考。
Hawthorn contains a large number of substances beneficial to the human health,among which polysaccharides are more abundant compared to other active components.Polysaccharides have anti-hyperglycemic and anti-hyperlipidemic effects,as well as good antioxidant capacity.This paper uses the ultrasonic-assisted extraction method to optimize the extraction process of polysaccharides from hawthorn.Based on the results of single-factor experiments and orthogonal experiments,it is found that the optimal extraction process of polysaccharides was as follows:the solid-to-liquid ratio of 1:40(g/mL),the ethanol concentration of 85%,the ultrasonic time of 40 min,and the temperature of 60℃.Under these conditions,the yield of polysaccharides is measured to be 15.33%,which provides a theoretical reference for the efficient extraction and rational application of polysaccharides in the food industry.
