摘要
目的:对2021年山东省平度市一起喜宴引起副溶血性弧菌食物中毒事件进行流行病学调查,为食源性疾病防控提供依据。方法:按照《食品安全事故流行病学调查技术指南(2012年版)》开展流行病学调查,对现场采集到的25份食品样本、4份环境样本和8份病例生物标本进行多病原检测。结果:从200名就餐者中搜索到病例24例,罹患率为12.00%(24/200)。病例临床表现为腹泻(100.00%)、腹痛(70.83%)、呕吐(54.17%)、恶心(33.33%)、发热(45.83%)。在4份病例生物标本和1份食品样本中检出副溶血性弧菌,所分离的5个菌株血清学分型均为O3:K6型。4株病例分离菌株毒力基因检测结果为tlh+、tdh+、trh-,1株食品分离菌株毒力基因检测结果为tlh+、tdh-、trh-。结论:该食物中毒事件是由O3:K6型副溶血性弧菌所致,涉事酒店在食物加工环节存在交叉污染。建议持续加强食品安全监管,全面提升从业人员食品安全意识,避免类似事件的发生。
OBJECTIVE To investigate the pathogen characteristics and epidemiology of a food poisoning incident caused by a wedding banquet in Pingdu of Shandong in 2021,and provide a basis for the prevention and control of foodbome diseases.METHODS Epidemiological investigations were carried out in accordance with The Technical Guidelines for Epidemiological Investigation of Food Safety Incidents(2012 Edition),and multi-pathogen testing was conducted on 25 food samples,4 environmental samples,and 8 biological specimens from patients collected at the scene.RESULTS 24 cases were found among 200 diners,with a prevalence rate of 12%(24/200).The clinical manifestations included diarrhea(100.00%),abdominal pain(70.83%),vomiting(54.17%),nausea(33.33%),and fever(45.83%).Vibrio parahaemolyticus was detected in 4 biological samples from patients and one food sample and the serotypes of the 5 isolated strains were all 03·K6.The virulence gene detection results of the 4 patient isolates showed tlh+,tdh+,trh-.Whereas for the one food-isolated strain,the results were tlh+,tdh-,and trh-.CONCLUSION The food poisoning incident was caused by Vibrio parahaemolyticus 03·K6.The hotel involved had cross-contamination during food processing.It is suggested that food safety supervision be continuously strengthened,and the food safety awareness of all practitioners be comprehensively enhanced to prevent similar incidents from happening.
