PCR技术在食品微生物检测中的应用与优化

Application and Optimization of PCR Technology in Food Microbiological Detection

摘要 随着食品安全问题的凸显,快速、准确检测食品微生物污染成为保障公众健康的关键。聚合酶链式反应(Polymerase Chain Reaction,PCR)技术因其高灵敏度、高特异性和快速性,在食品微生物检测中展现出显著优势。本文围绕PCR技术类型及其适用性,分析其在病原菌检测、腐败菌与发酵菌检测、转基因成分检测中的应用,提出切实有效的优化策略,并在此基础上就PCR技术在应用中的常见问题与解决方案进行了简要论述。 With the prominence of food safety issues,rapid and accurate detection of microbial contamination in food has become crucial for public health.Polymerase chain reaction(PCR)technology,due to its high sensitivity,specificity,and speed,demonstrates significant advantages in food microbiological testing.This article focuses on the types of PCR technology and their applicability,analyzing its applications in pathogen detection,spoilage and fermentation bacteria testing,and genetically modified component testing,and proposes practical optimization strategies.On this basis,it briefly discusses common problems and solutions in the application of PCR technology.
