贵州山桐子果实采后品质劣变规律

摘要 以贵州本土山桐子果实为研究对象,模拟采后常温高湿环境,探究其品质劣变规律。结果表明,山桐子采后常温高湿贮藏过程中,色泽劣变,果实处于不断失水状态,干基含油率持续缓慢上升。山桐子油脂肪酸以亚油酸为主要组分,占比为65.95%~67.65%,其次为棕榈酸,占比为13.93%~16.46%,棕榈一烯酸、油酸含量较高,硬脂酸、亚麻酸、芥酸以及二十四碳一烯酸含量较低且较为接近。贮藏过程中脂肪酸主要组分构成无变化,但各组分相对含量存在明显差异,二十四碳一烯酸变异最大,不饱和脂肪酸相对含量维持稳定;酸价和过氧化值均呈现不断上升趋势,油脂可食用性变差。相关性分析结果表明,随着采后贮藏时间的延长,含水率和千粒重逐渐下降;不饱和脂肪酸相对含量的稳定性与亚麻酸和二十四碳一烯酸的变化息息相关;虽然果实含油率升高,但油脂品质不断劣变。常温高湿贮藏导致山桐子品质不断劣变,适宜的贮藏条件是保障山桐子油脂品质的关键。 Taking the fruits of the local Idesia polycarpa tree in Guizhou as the research object,the post-harvest normal temperature and high humidity environment was simulated to explore the law of quality deterioration.The results showed that during the post-harvest storage of Idesia polycarpa trees at normal temperature and high humidity,the color deteriorates,the fruits were in a state of continuous water loss,and the dry basis oil content continued to rise slowly.The fatty acids in Idesia polycarpa oil were mainly composed of linoleic acid,accounting for 65.95%to 67.65%,followed by palmitic acid,which accounted for 13.93%to 16.46%.The contents of palmitic acid and oleic acid were relatively high,while the contents of stearic acid,alpha-linolenic acid,erucic acid and tetracenoic acid were relatively low and close.During the storage process,the composition of the main components of fatty acids remained unchanged,but there were significant differences in the relative contents of each component.The variation of tridecanoic acid was the greatest,while the relative content of unsaturated fatty acids remained stable.Both the acid value and peroxide value showed a continuous upward trend,and the edibility of the oil deteriorated.The correlation results showed that with the extension of post-harvest storage time,the moisture content and 1000-grain weight gradually decreased.The stability of the relative content of unsaturated fatty acids was closely related to the changes of alpha-linolenic acid and tridecanoic acid.Although the oil content of the fruit increased,the quality of the oil had been deteriorating continuously.Storage at normal temperature and high humidity led to the continuous deterioration of the quality of Idesia polycarpa.Appropriate storage conditions were the key to ensuring the quality of Idesia polycarpa oil.
