摘要
蜂蜜作为一种天然甜味物质,因其特殊的滋味、香气及抗菌、抗病毒、抗炎和抗氧化等特性而被广泛应用于食品、医疗健康、美容等领域。本文介绍了蜂蜜中的碳水化合物、水、蛋白质、有机酸、矿物质和多酚类化合物等营养成分及蜂蜜对细菌、真菌、病毒以及寄生虫等的抑制作用,本综述为蜂蜜的深入研究和应用提供数据支撑。
As a natural sweet substance,honey is widely used in the fi elds of food,medical health,beauty,etc.due to its special taste,aroma,and properties such as antibacterial,antiviral,anti-infl ammatory,and antioxidant eff ects.This paper introduces the roles played by the nutritional components in honey,including carbohydrates,water,proteins,organic acids,minerals,and polyphenolic compounds,as well as the antibacterial eff ects of honey against bacteria,fungi,viruses,and parasites.This review provides data support for the in-depth research and application of honey.
