摘要
目的 探讨九龙藤蜂蜜的成分及抗氧化活性。方法 采用折光率测定法、高效液相色谱法(high performance liquid chromatography,HPLC)、紫外分光光度法测定九龙藤蜂蜜中水分、果糖、葡萄糖、蔗糖、麦芽糖、5-羟甲基糠醛、总黄酮、总酚酸含量与九龙藤蜂蜜体外抗氧化能力相关性。结果 九龙藤蜂蜜理化指标均符合标准,总黄酮和总酚酸含量与其抗氧化活性呈较强显著正相关,5-羟甲基糠醛含量与2,2-二苯基-1-苦肼基(2,2-diphenyl-1-picrylhydrazyl,DPPH)自由基清除能力及2,2'-联氮双(3-乙基苯并噻唑啉-6-磺酸)阳离子[2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid) cation,ABTS^(+)]自由基清除能力呈正显著相关。结论 九龙藤蜂蜜具有良好的抗氧化能力,具备继续开发的潜在价值,研究结果丰富了九龙藤蜂蜜抗氧化能力的数据,为充分利用九龙藤蜂蜜资源、开发天然抗氧化产品提供了科学依据。
Objective To explore the components and antioxidant activities of Bauhinia championii honey.Methods The correlations between the content of moisture,fructose,glucose,sucrose,maltose,5-hydroxymethylfurfural,total flavonoids and total phenolic acids in Bauhinia championii honey and the in vitro antioxidant capacity of Bauhinia championii honey were determined by refractive index determination method,high performance liquid chromatography(HPLC)method and ultraviolet spectrophotometry.Results The physicochemical indicators of Bauhinia championii honey all met the standards.The content of total flavonoids and total phenolic acids was strongly and significantly positively correlated with its antioxidant activity,and the content of 5-hydroxymethylfurfural was positively and significantly correlated with the free radical scavenging ability of 2,2-diphenyl-1-picrylhydrazyl(DPPH)radical and 2,2’-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid)cation(ABTS+)radical.Conclusion Bauhinia championii honey has excellent antioxidant capacity and potential for further development.The research results have enriched the data on the antioxidant capacity of Bauhinia championii honey,providing a scientific basis for the full utilization of Bauhinia championii honey resources and the development of natural antioxidant products.
