摘要
目的 探究不同干燥方式对鱼腥草粉活性成分保留及抗氧化抗炎能力的影响,建立多指标综合评价体系以优化工业化干燥工艺。方法 以贵州产新鲜鱼腥草为原料,分别采用真空微波干燥、热风干燥、真空冷冻干燥及红外干燥处理,结合逼近理想解排序(technique for order preference by similarity to ideal solution,TOPSIS)法与熵权法综合评价多糖、黄酮、维生素C及总酚含量的保留效果,并通过2,2-二苯基-1-苦基肼基(2,2-diphenyl-1-picrylhydrazyl,DPPH)自由基、 2,2'-联氮-双(3-乙基苯并噻唑啉-6-磺酸)[2,2'-azinobis(3-ethylbenzothiazoline-6-sulfonic acid),ABTS]阳离子自由基清除实验及铁离子还原能力(ferric reducing ability of plasma,FRAP)法评估抗氧化活性,通过小鼠实验评估抗炎活性。结果 真空微波干燥的综合评分最高,其鱼腥草粉多糖含量为14.92 mg/g,黄酮含量为20.56 mg/g,总酚含量为14.95 mg/g,维生素C含量达159.92 mg/g;DPPH自由基与ABTS阳离子自由基的半数抑制浓度(half maximal inhibitory concentration,IC_(50))值分别为0.07 g/L和0.08 g/L,FRAP值为0.69,小鼠耳肿胀抑制率为27.4%,表明鱼腥草粉具有一定的抗氧化抗炎活性。结论 真空微波干燥在活性成分保留与抗氧化能力及抗炎活性上表现最优,适用于工业化生产,但需进一步优化能耗与成本。本研究通过多指标综合评价为鱼腥草粉干燥工艺的优化提供了理论支持。
Objective To explore the effects of different drying methods on the retention of active components and antioxidant and anti-inflammatory capabilities of Houttuynia cordata powder,and establish a multi-index comprehensive evaluation system to optimize the industrial drying process.Methods Using fresh Houttuynia cordata produced in Guizhou as raw materials,vacuum microwave drying,hot air drying,vacuum freeze-drying and infrared drying treatments were respectively adopted.The retention effects of polysaccharides,flavonoids,vitamin C and total phenol content were comprehensively evaluated by combining the technique for order preference by similarity to ideal solution(TOPSIS)method and entropy weight method.The antioxidant activity was evaluated by the 2,2-diphenyl-1-picrylhydrazyl(DPPH)free radical,2,2’-azinobis(3-ethylbenzothiazolin-6-sulfonic acid)(ABTS)cationic free radical scavenging experiment and the ferric reducing ability of plasma(FRAP)method,and the anti-inflammatory activity was evaluated by the mouse experiment.Results The comprehensive score of vacuum microwave drying was the highest.The polysaccharide content of Houttuynia cordata powder was 14.92 mg/g,the flavonol content was 20.56 mg/g,the total phenol content was 14.95 mg/g,and the vitamin C content reached 159.92 mg/g.The half maximal inhibitory concentration(IC50)values of DPPH free radical and ABTS cationic free radicals were 0.07 g/L and 0.08 g/L respectively,the FRAP value was 0.69,and the inhibition rate of mouse ear swelling was 27.4%,indicating that Houttuynia cordata powder had certain antioxidant and anti-inflammatory activities.Conclusion Vacuum microwave drying performs best in terms of retention of active ingredients,antioxidant capacity and anti-inflammatory activity,and is suitable for industrial production.However,energy consumption and cost need to be further optimized.This study provides theoretical support for the optimization of the drying process of Houttuynia cordata powder through a comprehensive evaluation of multiple indicators.
