摘要
目的分析微生物检验在疾病预防中的作用,了解2023年昭通市各县(市、区)食源性致病菌对食品的污染情况。方法采集11类253件样本,按照《食品安全国家标准食品微生物学检验》系列标准进行单核细胞增生李斯特菌、空肠弯曲菌、沙门氏菌等16个微生物项目检验,同时按照《食品安全国家标准动物性水产品及其制品中并殖吸虫的检验》进行寄生虫检测,就检查结果制定相应的疾病预防措施。结果所有标本共检测出致病菌67株,检出率26.5%,为单核细胞增生李斯特菌、沙门氏菌、产气荚膜梭菌等,主要分布于生畜肉、鲜银耳、木耳、预制菜、自制冷饮、外卖餐中,同时检出并殖吸虫7株,检出率35%,主要分布在鲜、活河蟹类样品中。结论微生物、寄生虫普遍存在于生活饮食方面,如加工食用不当可引起食源性疾病的发生。应当加强健康知识宣教、从食品的原料、加工、运输、储存等方面进行质控,以此减少食源性疾病的发生。
Objective Analyze the role of microorganisms in disease prevention,in order to understand the pollution of food-oriented pathogenic bacteria in various counties(cities,districts)in Zhaotong City in 2023.Methods The collection of 253 samples of 11 categories was based on"National Standard Food Microbiology Test"Nuclear cell hyperplasia,16 microbial testing projects such as Listeria monocytogenes,Campylobacter jejuni and Salmonella.At the same time,the parasite monitoring of parasites in accordance with the"Test of the Standard Animal Aquatic Products and its products in the National Standard Animal Aquatic Products and its products",and formulated the results of the test results.Corresponding disease prevention measures.Results All specimen detected 67 pathogenic bacteria,with a detection rate of 26.5%.The isolated pathogens were Listeria monocytogenes,Salmonella and Clostridium perfringens.In the dishes,homemade cold drinks,and takeaway meals,7 plants and colonial insects are detected at the same time,and the detection rate is 35%.It is mainly distributed in fresh and live river crab samples.Conclusion Microbial and parasites generally exist in dietary diet.Improper processing can cause food-oriented diseases.Quality control should be strengthened from the aspects of food,processing,transportation,and storage from the raw materials,processing,transportation,and storage of food to reduce the occurrence of food-oriented diseases.
