摘要
本文基于大连某高校自营食堂与承包经营食堂的食品安全审核结果,从审核评分、关键问题、整改效果等维度对比分析两种运营模式下的食品安全管理水平。研究发现,自营食堂在关键问题控制上存在显著短板,而承包食堂整体表现更优,但仍需关注高频次问题管理。运营模式差异直接影响管理资源的投入与执行效率,建议结合两种模式的优势进行管理体系优化。
Based on the food safety audit results of the self-operated canteen and the contracted canteen of a university in Dalian,this paper compares and analyzes the food safety management level of the two operation modes from the dimensions of audit score,key problems,and rectification effect.The results show that there are significant shortcomings in the control of key problems in self-operated canteens,while the overall performance of contracted canteens is better,but it is still necessary to pay attention to the management of high-frequency problems.The difference in operation mode directly affects the investment of management resources and the efficiency of execution,so it is recommended to combine the advantages of the two models to optimize the management system.
