摘要
本文聚焦烹饪新技术与传统菜品结合的趋势进行分析,剖析了采用新技术在传统菜品创新中遇到的阻碍,涉及食材口感跟风味的留存、消费者的认可度、成本与设备的投入以及食品安全与标准化状况,应对这些挑战的时候,提出了恰当的应用策略,包含通过优化技术应用来保留传统风味、借助加强市场调研引导消费者接受、合理规划投入以提高性价比,通过建立标准化流程保障食品安全,采用这些策略,能够有力促进烹饪新技术在传统菜品创新里的使用,助力餐饮业的扎实成长。
This paper focuses on the analysis of the trend of combining new cooking technologies with traditional dishes,and analyzes the obstacles encountered in the innovation of traditional dishes by adopting new technologies,including the retention of taste and flavor of ingredients,consumer recognition,cost and equipment input,as well as food safety and standardization.When dealing with these challenges,appropriate application strategies are proposed.Including by optimizing the application of technology to retain traditional flavors,by strengthening market research to guide consumer acceptance,reasonable planning investment to improve cost performance,through the establishment of standardized processes to ensure food safety,the adoption of these strategies can effectively promote the adoption of new cooking technology in traditional dishes innovation,to help the solid growth of the catering industry.
