铜源及水平对肉鸡生长性能、营养物质消化率、屠宰性能和肉质的影响 被引量:1

Effects of copper source and level on growth performance,nutrient digestibility,slaughter performance and meat quality of broilers

摘要 为研究不同水平的柠檬酸铜和硫酸铜对爱拔益加(AA)肉鸡生长性能、营养物质消化率、屠宰性能、肉品质的影响,将360只肉鸡,随机分为5组,每组6个重复,每个重复12只。试验采用2×2+1试验设计,对照组饲喂基础饲粮,试验组分别在基础饲粮中添加2种铜源(硫酸铜、柠檬酸铜)和2种铜水平(10、20 mg/kg),试验期42 d,分为生长前期(1~21日龄)、生长后期(22~42日龄)两个阶段。结果表明:生长前期(1~21日龄),柠檬酸铜与铜水平20 mg/kg组肉鸡的平均日增重显著提高(P<0.05)。生长后期(22~42日龄),与对照组比,柠檬酸铜组肉鸡的平均日增重显著提高了4.61%(P<0.05)。生长全期(1~42日龄),铜源和铜水平均显著提高了能量的表观消化率(P<0.05)。与对照组比,柠檬酸铜组肉鸡平均日增重、屠宰率、粗蛋白质的表观消化率、胸肌黄度值(b^(*))和滴水损失、腿肌红度值(a^(*))和(b^(*))值分别提高了4.79%、1.81%、4.46%、3.52%和2.31%、1.45%和3.45%(P<0.05);肉鸡的腹脂率降低了9.15%(P<0.05)。铜水平为20 mg/kg组肉鸡的平均日增重、屠宰率、胸肌a^(*)值、干物质和粗蛋白质的表观消化率较0 mg/kg组分别提高了4.03%、2.11%、1.28%、2.97%和4.46%(P<0.05)。与铜水平0 mg/kg组比,10 mg/kg和20 mg/kg组肉鸡胸肌b^(*)值和滴水损失分别提高了2.57%、3.00%和1.73%、2.02%;腿肌a^(*)值和b^(*)值分别提高了1.05%、1.45%和2.57%、3.01%(P<0.05);肉鸡的腹脂率分别降低了5.68%和8.83%(P<0.05)。综上所述,在相同铜水平情况下,柠檬酸铜能够一定程度上改善肉鸡的肉品质,对肉鸡的生长发育促进效果要优于硫酸铜,饲粮铜添加水平效果20 mg/kg>10 mg/kg。 This experiment was conducted to investigate the effects of different levels of copper citrate and copper sulfate on growth performance,nutrient digestibility,slaughter performance and meat quality of arboracres(AA)broilers.A total of 360 broilers were randomly divided into 5 groups with 6 replicates per group and 12 broilers per replicate.Broilers in the control group were fed a basal diet,while piglets in the experimental groups were fed the basal diet supplemented with two copper sources(copper sulfate and copper citrate)and two copper levels(10 mg/kg and 20 mg/kg),respectively.The experiment lasted for 42 days,and was divided into two stages:early growth(1~21 days of age)and late growth(22~42 days of age).The results showed that early growth stage(1~21 days of age):average daily gain of broilers in copper citrate and copper level 20 mg/kg groups was significantly increased(P<0.05).Later growth stage(22~42 days of age):compared with control group,copper citrate significantly increased the average daily gain of broilers by 4.61%(P<0.05).Growth stage(1~42 days of age):copper source and copper level significantly increased the apparent digestibility of energy(P<0.05).Compared with control group,the average daily gain,slaughter rate,apparent digestibility of crude protein,chest muscle yellow value(b^(*))and drip loss,leg muscle red value(a^(*))and b^(*) of broilers were increased by 4.79%,1.81%,4.46%,3.52%and 2.31%,1.45%and 3.45%,respectively(P<0.05).The percentage of abdominal fat in broilers was decreased by 9.15%(P<0.05).Compared with 0 mg/kg group,the average daily gain(ADG),slaughter rate,breast muscle a^(*),dry matter and crude protein apparent digestibility of broilers in 20 mg/kg copper level group were increased by 4.03%,2.11%,1.28%,2.97%and 4.46%,respectively(P<0.05).Compared with the copper level 0 mg/kg group,the breast b and drip loss of broilers in 10 mg/kg and 20 mg/kg groups were increased by 2.57%,3.00%,1.73%and 2.02%,respectively.The a^(*) value and b^(*) value of leg muscle redness(P<0.05)were increased by 1.05%,1.45%,2.57%,3.01%(P<0.05),respectively.The abdominal fat percentage of broilers was decreased by 5.68%and 8.83%,respectively(P<0.05).In summary,under the same copper level,copper citrate could improve the meat quality of broilers to a certain extent,and the promotion effect on the growth and development of broilers was better than that of copper sulfate,and the effect of dietary copper supplemental level was 20 mg/kg>10 mg/kg.
