摘要
食品安全事关民众健康福祉,在食品生产加工过程中,微生物污染引发的食源性疾病暴发时有发生。因此,探索高效、环保和经济的食品杀菌消毒新技术,不仅涉及产品质量安全提升,还关系到企业竞争力、行业可持续发展和公共卫生安全保障等多个层面。本文的研究旨在深入探讨次氯酸水这一新型消毒技术在食品生产链各环节中的应用实践,系统评估其使用安全性,提出关键控制点和安全保障策略,为食品工业推广应用次氯酸水消毒技术提供有益参考,以促进食品安全治理能力的提升。
Food safety is closely related to the health and well-being of the public.In the process of food production and processing,outbreaks of foodborne diseases caused by microbial contamination occur frequently.Therefore,exploring efficient,environmentally friendly,and economical new technologies for food sterilization and disinfection involves improving product quality and safety,as well as multiple aspects such as enterprise competitiveness,industry sustainable development,and public health security.The purpose of this study is to explore in depth the application practice of hypochlorous acid water as an emerging disinfection technology in various links of the food production chain,systematically evaluate its safety,propose key control points and safety guarantee strategies,and provide useful references for the promotion and application of hypochlorous acid water disinfection technology in the food industry,in order to promote the improvement of food safety governance capabilities.
