摘要
研究了甜菜红素的理化性质及其在不同环境中的稳定性 ,结果表明 :甜菜红素为水溶性色素 ,由多种物质组成。耐高温、耐氧化、耐还原能力较差 ,在酸性及中性环境中表现稳定 ,对自然光和紫外光较稳定。
In this paper the physicochemical property and stability of beet red pigment were investigated.The results indicated that beet red pigment is soluble in water and is comprised of diverse chemical composition.It is weak high-temperature tolerant,weak oxidation tolerant,weak reduction tolerant.And the beet red pigment is stable in acid and neutral environment and under light and ultraviolet.
