有机酸是衡量水果风味和营养品质的重要指标,有机酸的分析测定对水果的营养评价和加工利用具有重要意义。本文介绍了水果果实中有机酸的检测方法,对其优缺点进行归纳总结,为水果果实中有机酸的检测方法的选择提供参考。
Organic acids are important indicators for measuring the flavor and nutritional quality of fruits,and the analysis and determination of organic acids are of great significance for the nutritional evaluation and processing utilization of fruits.This article introduces the detection methods for organic acids in fruits,summarizes their advantages and disadvantages,and provides reference for the selection of detection methods for organic acids in fruits.
