摘要
椴六点天蛾(Marumba dyras)虫害在广东湛江等地发财树和木棉上常年发生,了解其幼虫的主要营养成分可为椴六点天蛾的资源化利用提供理论依据。本文采用国家标准的测定方法,检测椴六点天蛾幼虫水分、蛋白质、碳水化合物、脂肪、脂肪酸、氨基酸、维生素、微量元素等组成,分析其成分,并与常见食物进行对比分析。结果表明,椴六点天蛾幼虫水分含量为89.51%,干物质中蛋白质含量为61.85%,碳水化合物为23.79%,脂肪含量为7.61%。必需氨基酸含量为218.7 mg/g,占总氨基酸的45.30%,必需氨基酸和非必需氨基酸的比值为1.01,氨基酸指数为62.64。干物质中共检测出8种脂肪酸,其中不饱和脂肪酸占9.47%,饱和脂肪酸占5.38%。每100 g干物质中维生素B2、D、E分别为44.2 mg、3.67μg、8.10 mg。常量元素和微量元素中钾、钙、磷、镁、铁、锌、铜、锰、硒的含量分别为2.92 g/kg、1.03 g/kg、3.95 g/kg、2.11 g/kg、122 mg/kg、0.090 g/kg、7.56 mg/kg、44.42 mg/kg、0.158 mg/kg。胆固醇含量为245.48 mg/kg,β-胡萝卜素为6.53 mg/100 g。椴六点天蛾幼虫富含蛋白,脂肪酸组成合理,元素丰富,具有较高的营养价值和食用价值,具有开发潜力。
Marumba dyras occurs all year round on Pachira glabra and Bombax ceiba in Zhanjiang,Guangdong.Understanding the main nutrients of its larvae can provide theoretical basis for resource utilization of Marumba dyras.The composition of water,protein,carbohydrate,fat,fatty acid,amino acid,vitamin,trace element and so on were detected by the determination method of national standard,and the composition was analyzed and compared with common food.The results showed that the moisture content of Marumba dyras larvae was 89.51%,the protein content in dry matter was 61.85%,the carbohydrate content was 23.79%,and the fat content was 7.61%.The content of essential amino acids was 218.7 mg/g,accounting for 45.30%of the total amino acids.The ratio of essential amino acids to nonessential amino acids was 1.01,and the amino acid index was 62.64.A total of 8 kinds of fatty acids were detected in dry matter,of which 9.47%were unsaturated fatty acids and 5.38%were saturated fatty acids.Vitamin B2,D and E were 44.2 mg,3.67μg and 8.10 mg per 100 g dry matter,respectively.The contents of Potassium,Calcium,Phosphorus,Magnesium,Ferrum,Zinc,Copper,Manganese and Selenium in major and trace elements were 2.92 g/kg,1.03 g/kg,3.95 g/kg,2.11 g/kg,122 mg/kg,0.090 g/kg,7.56 mg/kg,44.42 mg/kg and 0.158 mg/kg,respectively.Cholesterol and beta-carotene contents were 245.48 mg/kg and 6.53 mg/100 g,respectively.In Conclusion,the larva of Marumba dyras is rich in protein,with reasonable fatty acid composition and abundant elements.It has high nutritional value and edible value,and has potential development.
