摘要
咖啡初加工是云南小粒种咖啡产业链上至关重要的环节,传统的咖啡初加工工艺不规范,尤其是作坊式生产,咖啡豆质量不稳定,对环境污染大,治污难度高。文章从咖啡初加工问题和技术创新与应用方面详细介绍一种新型的咖啡无水绿色初加工技术,该技术工艺规范,实现标准化生产,咖啡豆质量稳定,且实现污水零排放,达到绿色环保要求。
The primary processing of coffee is a crucial link in the Arabica coffee industry chain in Yunnan.The traditional coffee preliminary processing technology is not standardized,especially in the workshop production,the quality of coffee bean is unstable and the environmental pollution is severe and difficult to control.This paper introduces in detail a new type of coffee water-free green primary processing technology from the aspects of coffee primary processing problems,technological innovation and application.This technology is regulated,achieving standardized production,stable coffee bean quality,zero sewage discharge,and meeting green environmental protection requirements.
