摘要
目的:对最新发布的白酒质量要求系列标准中指示剂法测定白酒中酸酯总量的测量不确定度进行分析并评定。方法:依据标准要求,按照酸酯总量中指示剂法的测量步骤确立测量不确定度的模型,并对各个分量进行分析及评定,最终进行合成。结果:指示剂法测定白酒中酸酯总量结果可表示为(42.0±0.2)mmol·L^(-1)(k=2)。结论:测量不确定度主要来源有酸酯总量测量的重复性、酒样体积、酸碱标准滴定溶液浓度、总酸滴定体积、总酯滴定体积及空白滴定体积,其中酒样体积、总酸滴定体积、总酯滴定体积、空白滴定体积引入的不确定度占比较大。因此在测定过程中需要重点注意,整个滴定过程操作要严谨规范。
Objective:To analyze and evaluate the uncertainty in the determination of total acid esters in Baijiu by indicator method in the latest series of standards for Baijiu quality requirements.Method:According to the standard requirements,the measurement uncertainty model was established as per the measurement steps of indicator method for total amount of acid esters,and then each component in the method was analyzed and evaluated before final calculation.Result:The indicator method for the determination of the total amount of acid esters in liquor can be expressed as(42.0±0.2)mmol·L^(-1)(k=2).Conclusion:The main sources of measurement uncertainty are the repeatability of total ester measurement,wine sample volume,concentration of acid-base standard titration solution,total acid titration volume,total ester titration volume and blank titration volume,of which the wine sample volume,total acid titration volume,total esters titration volume and blank titration volume accounted for the larger part of uncertainty of measurement.Therefore,the emphasis shall be placed on the whole titration process to keep it rigorous and standardized.
