中国蒸馏技术与蒸馏酒起源的探究分析 被引量:5

摘要 白酒在我国具有悠久的历史和深厚的文化底蕴,是我国的国粹之一。作为独具民族特色的蒸馏酒,中国白酒生产技术的起源和发展历程受到国内专家学者的关注和研究。史学界关于我国白酒起源形成了多种学术观点。本着百家争鸣的态度,本文从国内外酿酒技术与蒸馏技术的起源时间出发,通过对国内外历史文献资料的分析,梳理国内外蒸馏酒的出现时间、形态及演变的历程,力图探寻中国白酒可能的起源时间与发展脉络。本文分析发现在我国秦汉时期已经掌握了成熟的蒸馏技术,并很可能出现蒸馏酒的雏形;在漫长历史发展过程中随着酿酒蒸馏技术的进步,早期的蒸馏酒从入药、戏法等用途逐步转化为饮用。 Chinese Baijiu has a long history and profound cultural deposits. The origin and development of Chinese Baijiu production technology has always been concerned and studied by domestic experts and scholars. The historian circle has formed a variety of academic views on the origin of Chinese Baijiu.This paper starts from the analysis of the origin time of domestic and foreign brewing technology and distillation technology, through the analysis of domestic and foreign historical documents, sorts out the emergence time,form and evolution process of domestic and foreign distilled spirits, and tries to explore the possible origin time and development route of Chinese Baijiu. This paper finds that mature distillation technology has been mastered in the Qin and Han Dynasties,and the embryonic form of modern distilled liquor has likely appeared then. With the progress of brewing and distillation technology,the consumption purpose of distilled liquor has gradually shifted from medicinal, magic and other uses to drinking purpose.
