摘要
预制菜是近年来兴起的一种新兴行业,具有良好的发展前景。通过归纳食用菌预制菜发展中存在的问题以及加工中主要的工艺技术要点,针对不足提出了建议,以期为食用菌预制菜的工业化生产提供参考。
Prefabricated dishes is a new rising industry in recent years,which has a good development prospect.The problems existing in the development of edible fungus prefabricated dishes and the main technological points in the processing were summarized,and suggestions aim at the deficiencies were put forward,in order to provide reference for the industrialized production of edible fungi prefabricated dishes.
