摘要
随着材料加工制造技术的发展,食品包装材料的类型越来越多,为食品加工企业食品包装和食品保护提供了更多的材料选择。但食品接触材料挥发性气味物质在一定的温湿度条件下具有迁移作用,当食品接触材料中化学物质迁移到食品中的剂量超标,残留的有害物质会对人体生殖系统、神经系统、免疫系统和内分泌系统等造成不同程度的损伤。基于迁移理论对食品接触材料中的挥发性气味物质分析,是食品卫生安全管理的基础。因此,本文综述了食品接触材料中挥发性气味物质分析技术的研究进展,旨在为食品接触材料有害物质分析及标准体系的完善提供一些参考。
With the development of material processing and manufacturing technology,there are more and more types of food packaging materials,providing more material choices for food packaging and food protection for food processing enterprises.However,volatile odor substances in food contact materials have a migration effect under certain temperature and humidity conditions.When the dose of chemical substances in food contact materials migrated into food exceeds the standard,the residual harmful substances will affect the human reproductive system,nervous system,immune system and endocrine system,etc.and cause varying degrees of damage.The analysis of volatile odor substances in food contact materials based on migration theory is the basis of food hygiene and safety management.Therefore,this paper reviews the research progress of volatile odorant analysis technology in food contact materials,aiming to provide some references for the analysis of harmful substances in food contact materials and the improvement of the standard system.
