冷萃咖啡无菌过滤解决方案的研究

摘要 探讨颇尔0.1μm过滤精度中空纤维膜和微生物除菌滤芯的过滤组合方式对3倍浓缩的冷萃咖啡过滤、维持其生物稳定性的可行性。中空纤维膜系统在近4h的运行时间内平均通量达到36LMH(L/m~2/h)。中空纤维的新鲜滤出液再经10英寸0.45μm微生物精度滤芯过滤,过滤载量2500L/m~2以上;滤出液理化指标符合要求;口感相较于传统UHT超高温灭菌工艺得到较大的提升,且除菌滤芯下游取样未发现指标微生物(包括大肠菌群、菌落总数、霉菌和酵母菌)。颇尔0.1μm过滤精度中空纤维膜和0.45μm微生物精度滤芯的过滤组合方式是目前可行的冷萃咖啡除菌过滤、维持其生物稳定性的解决方案之一。 The feasibility of sterilization filtration combination mode of three times concentrated cold brew coffee of Pall 0.1μm pore size hollow fiber membrane and final filter was discussed.The average flux of hollow fiber membrane system reaches 36 LMH in nearly 4 hours of running time,the filtrate passes through 10 inches 0.45μm microbial rate cartridge,the throughput can reach up to 2500L/m2.In the meantime,the physical and chemical parameters of the filtrate are within specification,compared with the traditional UHT ultra-high temperature sterilization protocol,the taste test has been greatly improved,and no microorganism was found in the downstream sampling of the final filter(including coliform group,total number of colonies,mold and yeast).The sterilization filtration combination mode of Pall 0.1μm pore size hollow fiber membrane and 0.45μm microbial rate sterilization cartridge is a feasible aseptic filtration solution for cold brew coffee.
