摘要
探讨了碱沉酸提法对广东丝苗类大米米糠提取粗蛋白过程中溶剂选择、料液比、提取时间、温度和碱液浓度几个因素对提取率的影响,结果发现较优的提取工艺条件为NaOH浓度为0.10 mol/L、料液比为1∶10、提取温度为25℃及提取时间为150 min,此条件下测得籼碎米中大米蛋白提取率为74.3%。
The effects of solvent selection,solid-liquid ratio,extraction time,temperature and alkali concentration on the extraction rate of crude protein from Guangdong silk seedling rice bran by alkali precipitation and acid extraction were discussed.The results showed that the better extraction conditions were NaOH concentration of 0.10 mol/L,solid-liquid ratio of 1:10,extraction temperature of 25℃and extraction time of 150 min,the extraction rate of rice protein from broken indica rice was 74.3%.
