摘要
我国香蕉皮资源丰富,但多作为固体废弃物丢弃。香蕉皮富含多酚、类胡萝卜素、甾醇等活性成分,在功能食品和新药品的开发方面应用前景广阔。总结了香蕉皮的主要活性成分、功能特性及应用领域,以期为香蕉皮资源的产业化开发提供参考。
China is rich in banana peel resources,but most of them are discarded as solid waste.Banana peels are abundant in active compounds,such as polyphenols,carotenoids,sterols,which has a bright future in functional foods and new drugs.The main active compounds,functional activities and application status of banana peels were summarized in this study.The research could provide theoretical reference for industrialization development of banana peel resources.
