摘要
本试验旨在研究柑橘提取物对快速型黄羽肉鸡运输应激后体重损失、屠宰性能、抗氧化能力和肉品质的影响。选取1日龄快速型黄羽肉鸡母鸡360只,随机分成2组,每组6个重复,每个重复30只鸡。对照组饲喂玉米-豆粕型基础饲粮,柑橘提取物组饲喂在基础饲粮中添加10 mg/kg柑橘提取物的试验饲粮。试验期63 d。试验结束后,采用2×3因子试验设计,每个重复选6只鸡进行运输应激试验,分别运输0、2和4 h,运输结束后进行屠宰取样。结果表明:1)饲粮处理与运输时间对快速型黄羽肉鸡的体重损失存在显著交互作用(P<0.05);与对照组相比,运输2和4 h后柑橘提取物组的体重损失显著降低(P<0.05);运输时间显著影响体重损失(P<0.05),随着时间的延长,体重损失越来越大(P<0.05)。2)与对照组相比,运输0、2和4 h后饲粮添加柑橘提取物可显著提高快速型黄羽肉鸡的胸肌率和腿肌率(P<0.05)。3)与对照组相比,运输0、2和4 h后柑橘提取物组快速型黄羽肉鸡胸肌中的丙二醛(MDA)含量显著降低(P<0.05),运输2和4 h后柑橘提取物组胸肌中的谷胱甘肽过氧化物酶(GSH-Px)活性显著升高(P<0.05);运输时间显著影响胸肌中的MDA含量和GSH-Px活性(P<0.05),随着时间的延长,MDA含量显著升高(P<0.05),GSH-Px活性显著降低(P<0.05)。4)饲粮处理和运输时间对快速型黄羽肉鸡胸肌的45 min亮度(L_(45 min)^(*))和45 min红度(a_(45 min)^(*))存在显著交互作用(P<0.05);与对照组相比,运输0、2和4 h后柑橘提取物组胸肌的L_(45 min)^(*)显著降低(P<0.05),而a_(45 min)^(*)显著升高(P<0.05);运输时间显著影响L_(45 min)^(*)和a_(45 min)^(*)(P<0.05),随着时间的延长,L_(45 min)^(*)显著升高(P<0.05),而a_(45 min)^(*)显著降低(P<0.05)。与对照组相比,运输0、2和4 h后柑橘提取物组快速型黄羽肉鸡胸肌的剪切力显著降低(P<0.05);运输时间显著影响胸肌的剪切力(P<0.05),随着时间的延长,剪切力显著升高(P<0.05)。由此可见,运输应激显著影响黄羽肉鸡的体重损失和肉品质,而饲粮中添加柑橘提取物可降低运输后黄羽肉鸡的体重损失,提高胸肌抗氧化能力,改善肉品质,缓解运输应激对黄羽肉鸡的影响。
This experiment was conducted to study the effects of citrus extract on body weight loss,slaughter performance,antioxidant capacity and meat quality of rapidly-growing yellow-feathered broilers after transportation stress.Three hundred and sixty one-day-old rapidly-growing yellow-feathered female broilers were randomly divided into 2 groups with 6 replicates per group and 30 broilers per replicate.Broilers in control group were fed a corn-soybean meal basal diet,and the others in citrus extract group were fed the basal diets supplemented with 10 mg/kg citrus extract.The experiment was lasted for 63 days.At the end of the experiment,six broilers were selected from each replicate for transport stress test by 2×3 factors experimental design,and slaughtering and sampled after transportation for 0,2 and 4 h,respectively.The results showed as follows:1)there was significant interaction between dietary treatment and transportation time on body weight loss of rapidly-growing yellow-feathered broilers(P<0.05).Compared with control group,body weight loss in citrus extract group was significantly decreased after transportation for 2 and 4 h(P<0.05).Transportation time significantly affected body weight loss,body weight loss was increased with the extension of transportation time(P<0.05).2)Compared with control group,dietary citrus extract significantly increased breast muscle rate and leg muscle rate of rapidly-growing yellow-feathered broilers after transportation for 0,2 and 4 h(P<0.05).3)Compared with control group,the content of malondialdehyde(MDA)of breast muscle of rapidly-growing yellow-feathered broilers in citrus extract group was significantly decreased after transportation for 0,2 and 4 h(P<0.05),and the activity of glutathione peroxidase(GSH-Px)of breast muscle in citrus extract group was significantly increased after transportation for 2 and 4 h(P<0.05).Transport time significantly affected the content of MDA and the activity of GSH-Px,the content of MDA was significantly increased and the activity of GSH-Px was significantly decreased with the extension of transport time(P<0.05).4)There was significant interaction between dietary treatment and transportation time on 45 min brightness(L_(45 min)^(*))and 45 min redness(a_(45 min)^(*))of rapidly-growing yellow-feathered broilers(P<0.05).Compared with control group,L_(45 min)^(*) of breast muscle in citrus extract group was significantly decreased after transportation for 0,2 and 4 h(P<0.05),while a_(45 min)^(*) was significantly increased(P<0.05).Transportation time significantly affected L_(45 min)^(*) and a_(45 min)^(*),L_(45 min)^(*) was significantly increased and a_(45 min)^(*) was significantly decreased with the extension of transportation time(P<0.05).Compared with control group,the shear force of breast muscle of rapidly-growing yellow-feathered broilers in citrus extract group was significantly decreased after transportation for 0,2 and 4 h(P<0.05).Transportation time significantly affected shear force of breast muscle,shear force was significantly increased with the extension of transportation time(P<0.05).It is concluded that transportation stress significantly affects body weight loss and meat quality of yellow-feathered broilers,and dietary citrus extract can reduce body weight loss of yellow-feathered broilers after transportation,improve antioxidant capacity of breast muscle,improve meat quality,and alleviate the impact of transportation stress on yellow-feathered broilers.
