摘要
随着教育的国际交流日益频繁,除了满足我国拔尖人才培养,也应该建设一些能够适应国际文化交流课程。“食品化学”课程是从化学角度和分子水平上研究食品的化学组成、结构、理化性质、营养和安全性质及其在生产、加工、贮存和运输、销售过程中的变化和对食品品质和食品安全性影响的科学。“食品化学”在线课程的全英文建设,以食品中主要的组成成分为出发点,食品在生产销售活动中发生的一些化学和生物化学反应作为主线,以其对食品品质和安全性产生的影响为归属,将“食品化学”建设成为一门国际在线课程。
Nowadays,international exchange of education has been more and more frequent,in addition to satisfying the cultivation of top talents in China,some courses should also built to adapt to the international situation.Food Chemistry is the course of the major of food science and engineering.It is a compulsory academic foundation course.Chemical composition,structure,physical and chemical properties,nutrition and safety properties of food were presented.Based on the main components of food,chemical and biochemical reactions occurred in food production and sales were taken,and the impact on food quality and safety,we plan to build food chemistry into an international online course.
