摘要
以野生型马齿苋和栽培型马齿苋为材料,分别对2种类型马齿苋的茎和叶的主要营养成分进行分析。结果显示,2种马齿苋都表现为叶营养成分高于茎。对于同一部位,野生马齿苋在矿物质、游离氨基酸、总脂肪酸、蛋白质等方面高于栽培型马齿苋。栽培型马齿苋在维C、果糖、葡萄糖、亚油酸(叶)含量上高于野生型。栽培型马齿苋的草酸含量低于野生型马齿苋,结果表明栽培型马齿苋更适于作为蔬菜食用。
The nutritional components of stems and leaves of purslane from wild and cultivated(Holland)types were determined.The results showed that the content of most nutritional components in the leaves were higher than those in the stems in both wild and cultivated purslane.The content of mineral elements,free amino acids,total fatty acids and protein in wild purslane were higher than those in cultivated purslane.While the content of VC,fructose,glucose and linoleic acid were higher in cultivated purslane than those in wild purslane.The content of oxalic acids in cultivated purslane was lower than that in wild purslane.The results indicated that the cultivated purslane was more suitable as a vegetable compared with the wild purslane.
