摘要
以云南德宏主栽百香果品种‘台农一号’为试材,研究了不同采收成熟度果实在常温贮藏过程中皱缩指数、果皮色泽、可食率、可溶性固形物(TSS)、可滴定酸(TA)含量以及TSS/TA等指标的变化。结果表明:在贮藏期间,10成熟果实的果皮皱缩最快,皱缩指数变化最大;8成熟果实的果皮皱缩最慢,皱缩指数变化最小;7成熟果实的果皮一直为绿色或红绿色,转色较差,而8成熟以上果实均能正常转色;在采收时,7成熟果实的TSS含量和TSS/TA显著低于其他3个成熟度果实的(P<0.05),而TA含量显著高于其他3个成熟度果实的(P<0.05),4个成熟度果实的可食率没有显著差异。7成熟果实的TA含量在整个贮藏过程中均显著高于其它3个成熟度果实的(P<0.05),TSS/TA显著低于其它3个成熟度果实的(P<0.05);8成熟果实的TA含量和TSS/TA在贮藏2 d后与9成熟和10成熟果实没有显著差异。在贮藏后期,10成熟果实的TSS/TA显著降低(P<0.05),7成熟果实的可食率显著降低(P<0.05)。因此,8成熟和9成熟是百香果较合适的采收期,8成熟果实适于较长距离的贮运和销售,9成熟果实适于短距离的贮运销售或产地销售。
The main passion fruit cultivar‘Tainong No.1’in Dehong Prefecture,Yunnan Province was used as test material.The changes of fruit shrinkage index,peel color,edible rate,Soluble solids(TSS),titratable acids(TA)and TSS/TA of fruit with different harvest maturity were studied during storage at room temperature.The results showed that in the storage period,the peel of 100%maturity fruit was the fastest to shrink and the changes of shrinkage index was the largest.The peel of 80%maturity fruit was the slowest to shrink,and the changes of shrinkage index was the smallest.The peel of 70%maturity was always green or red-green,with poor color conversion,and the fruits of above 80%maturity could turn color normally.At harvest time,TSS and TSS/TA of 70%maturity fruit were significantly lower than those of the other 3 maturity(P<0.05),and TA was significantly higher than that of the other 3 maturity(P<0.05).There was no significant difference in the edible rate of 4 maturity fruits.The TA of 70%maturity fruit was significantly higher than that of the other 3 maturity(P<0.05),and the TSS/TA was significantly lower than that of the other 3 maturity(P<0.05)in the whole storage process.There was no significant difference in TA and TS/TA among 80%maturity fruit after 2 days’storage,90%and100%maturity fruit.The TSS/TA of 100%maturity fruit and the edible rate of 70%maturity fruit were significantly decreased(P<0.05)during late storage.In summary,80%and 90%maturity fruit were the appropriate harvest time.80%maturity fruit can be used as long-distance storage and transportation sales,and 90%maturity fruit can be used as short-distance storage and transportation sales or production area sales.
