摘要
本文对腐败乳制品中的腐败菌株分离纯化,并收集企业加工工厂环境、生产车间空气及多个牧场原料奶中的微生物,将这些菌株用全自动微生物鉴定系统鉴定菌株种属,最后进行相互比对分析,从而追溯液体乳中致腐败微生物的具体来源。最终发现在工厂大门口、洗瓶场口以及原料奶输入管道口均存在蜡样芽孢杆菌(Bacillus cereus),原料奶中存在枯草芽孢杆菌(Bacillus subtilis)。
This paper isolates and purifies spoilage strains in spoiled dairy products,and collects microorganisms in the environment of enterprise processing plants,the air of production workshops,and raw milk from multiple pastures.These strains are identified by the automatic microbial identification system,and finally compared and analyzed with each other,so as to trace the specific source of the spoilage microorganisms in the liquid milk.Eventually,it was found that Bacillus cereus was present at the gate of the factory,the bottle washing facility and the raw milk input pipeline,and Bacillus subtilis in the raw milk.
