乳制品生产过程中耐热菌分离鉴定与抑菌效果评价 被引量:7

摘要 通过对乳制品生产过程中微生物易污染点进行耐热菌菌株分离鉴定;同时利用低聚果糖、嗜酸乳杆菌和保加利亚乳杆菌作为抑菌物质对耐热菌进行抑菌作用效果观察。结果表明,地衣芽孢杆菌、枯草芽孢杆菌、蜡样芽胞杆菌等耐热芽孢菌为奶制品生产中优势污染菌;原料为耐热菌重要污染来源之一。抑菌物质对耐热菌生长有一定的抑制效果,组合添加抑菌物质抑菌效果更佳;对于不同的耐热菌,有针对性选择抑菌物质能起到较好的抑菌效果。 Thermoduric bacteria from pollution sites which convenient contaminated by microorganism are isolated and identified during dairy production; as antibacterial substances ,oligofructose Lactobadllus acidophilus and LactobaciUus bulgaricus are applied to evaluated bacterio- static effect on thermoduric bacteria. Results show that thermocluric bacillus such as Badllus licheniformis, Badllus subtilis, Badllus cereus are domi- nant bacteria on dairy production; raw material is one of the main pollution of tliermoduric bacteria. The antibacterial material has certain in- hibitory effect on the growth of thermoduric bacteria, and the bacteriostatic effect with combination of antibacterial is much better; desirable antibacterial effect on different thermoduric bacteria can be achieved via the addition of antibacterial substances in different ways.
