摘要
以野菊花黄色素为研究对象,对其稳定性和抗氧化活性进行研究.稳定性实验结果表明:H2O2加入使野菊花黄色素吸光度降低;Na2SO3、葡萄糖和柠檬酸钠对黄色素起到增色作用.抗氧化活性实验结果表明:野菊花黄色素具有较好的抗氧化能力,对2,2-联苯基-1-苦基肼基自由基(DPPH·)、超氧阴离子自由基(O-2·)及羟自由基(·OH)都具有较强清除作用,清除能力随加入量的增加而增大,且清除效果优于Vc、芦丁和BHT.
The stability and antioxidant activity of the yellow pigment extracted from chrysanthemum indicum was studied.The results of stability showed that H 2O 2 decreased the absorbance,while Na 2SO 3,glucose and sodium citrate play a hyperchromic effect on the yellow pigment.The experimental results of antioxidant activity showed that there are obvious antioxidant activities in yellow pigment.The yellow pigment had strong scavenging effect to DPPH·,superoxide anion(O-2·),hydroxyl radical(·OH),the scavenging effect increased according to the increase of adding amount.The pigment has a strong external antioxidation activity,and its ability of scavenging was far better than Vc,rutin and BHT.
