摘要
为避免将各个比较点的灰色关联系数在集中为灰色关联度的过程中出现冗余或丢失,采用层次分析法根据各个比较点在整个系统中的重要性,分别确定各比较点的权重,以此来确定最终的灰色关联度,并根据灰色关联度有效地反映出各比较列和参考列的相关程度。将层次-灰色关联分析法应用于超高压处理的肉品嫩化工艺优化中,得到最佳优化条件:压力强度378.12 Mpa、CaCl 2摩尔浓度0.28 mol/L、保压时间14.61 min,结果表明该方法可有效地进行嫩化工艺参数的优化。
When applying the Grey Relation Analysis(GRA),to avoid the redundancy or loss of the grey correlation coefficient of each comparison points in the process of concentrating them into grey correlation degree,according to the importance of each comparison point in the comparison system,Analytic Hierarchy Process(AHP)is used to determine the weight of each comparison point,and to figure out the grey correlation degree.The correlation degree of each comparison column and reference column is effectively reflected based on the grey correlation degree.For applying the AHP-GRA to the optimization of meat tenderizing process under ultra-high pressure treatment,the optimal conditions were obtained:pressure strength was 378.12 mpa,CaCl 2 concentration was 0.28 mol/L,holding time was 14.61 min.The results show that the AHP-GRA method can effectively optimize the tenderizing process parameters.
